This granola is much healthier than most of the ones you can buy in the supermarket and is a great way to start the day, or something healthy to snack on throughout the day.
- 1/2 cup peanut butter
- 1/3 cup coconut oil
- 3 tbsp agave or maple syrup
- 2 tbsp baobab powder
- 2 cups oats
- 1 cup coconut chips
- 1/3 cup goji berries
- 1/3 cup pumpkin or sunflower seeds
Preheat the oven to 180C/350F/gas 4 and line a baking tray with baking paper.
Add the peanut butter, coconut oil, agave/maple syrup and baobab powder to a saucepan and melt on a medium heat.
Mix the remaining ingredients in a bowl and pour over the mixture from the pan.
Stir well to coat all of the ingredients.
Spread evenly over the baking tray and bake for 25 minutes or until golden brown, checking occasionally to make sure it doesn't burn.
Enjoy on its own, with yoghurt or any type of milk.
